A new recipe

A new healthy recipe ;
Oatmeal Chocolate Peanut Butter, No-Bake Candy Bars 
Yes! they are healthy.

1 cup peanut butter
2/3 cup honey 
½ cup coconut oil (no substitute)
2 cups oatmeal oats (not instant) 
1¼ cup mini chocolate chips 
3/4 cup dried cranberries 
 Directions: 
In a medium sized saucepan melt together peanut butter, honey 
and coconut oil.
Remove from heat and add oats, chocolate chips and dried cranberries. Stir until combined and chocolate chips are melted.
Spread into 9 x 13 pan. 
Refrigerate until hardened about 1 hour. 
Store in refrigerator. Yummy !

These are so delicious and I believe part of its good taste comes from the beautiful and yummy honey I used  ......

Simple to make with minimal ingredients that are healthy 
 Did I mention they are delicious. I think this will be the key snack food in my refrigerator this summer.

Speaking of summer some signs are evident in the back yard that it is coming   
The pool was filled and hubby is busy cleaning, purifying  and heating the water.  
The Adirondack chairs are out, the lawn grows like crazy with all the rain we have had, the black flies are out with a vengeance, and the smell of Bar-B-Q is the aroma all over the neighborhood. 

 and to add to a happy day.....  I've got mail
 from Kimberly Jolly... Yes! that's right  Fat Quarter Shop 
My next project... 
 Bertie's Year. 12 months of cute wool appliqués and 
Kimberly has all the fabric to make the blocks .
 Spring, Summer, Fall and Winter

Then there is the 
Woolies Flannel Dark Brown Houndstooth Yardage 
for all the blocks' background. Now I am ready to cut and get these blocks ready . It will be the perfect project for the summer spent on my patio, or while travelling and vacationing.
